Galbani is one of the nation’s leading producers of cheese and Galbani’s mozzarella is Tops go-to cheese of choice on every pizza pie we produce. Galbani’s (formerly Sorrento’s) was founded in 1947 by Louis Russo, an immigrant from Sorrento, Italy. Bringing his family traditions of making soft Italian cheese, “the old-fashioned way” Russo would buy fresh cans of milk every morning, and would spend the early hours making ricotta and mozzarella while the afternoons were devoted to traveling throughout western New York, selling the products of the morning's labors. Now located on South Park Ave. in Buffalo, Galbani produces more than 68 million pounds of mozzarella cheese annually. If you live in Buffalo the words Cup and Char make your taste buds tingle in anticipation. That crisp charred edge on the surface with the pooling of just enough grease is something that only Margherita can capture. Created by Buffalo born and raised, Vince Dentico, back in the early 70’s, Cup and Char captures an old world flavor profile with a natural casing flavor, but still had a taste that captured the spices, bite, char, and curl as well as the performance as Margherita Fine Stick Pepperoni. “My father worked for many years to create this item,” said Enzo Dentico, chairman of Affinity Group. “He was known as the “Dry Sausage King” and nationally had a reputation for selling this high end/expensive item to pizzerias across the region.
